When requesting shipping quotes from suppliers in China, is it common to ask for quotes for sea, air freight and air express? Or usually just sea and air freight?

No reason not to ask for different quotes. As Lam Clarencesays, there is a lot to the answer that also includes how quick do you want it and do you want the simplest door-to-door service.

My experience (interested to hear what others say) for VERY rough guesses:
0-200kg use Currier (express[FedEx, DHL, UPS, etc) [3-10 days] with added benefit of door to door,
200-500kg use Air Freight [7-14 days] likely need Freight Forwarder, Customs Broker, local transportation to door
300kg+ use sea [25-45 days] likely need Freight Forwarder, Customs Broker, local transportation to door.

But there is a great deal of overlap based on product value, weight, size and product type.
